Potato: Yummy Frittata

Yummy Frittata

1 thin skinned (new) potato cut into a dice
1 C. Thinly sliced mushrooms
1/4 C. finely diced sweet red pepper
1 jalapeno pepper, seeded, finely diced
4 green onions, sliced thin
4 large eggs
1/2 C. grated "old" cheddar cheese
1/2 C. water
sprinkle of dried oregano
sprinkle of freshly cracked pepper
sprinkle of coarse salt
sprinkle of garlic powder or 1/4 tsp. minced garlic


Combine potatoes, oil, mushrooms and 1/4 C. of the water in a 10-12 inch frying pan with an ovenproof handle. Cover and cook over medium high heat, stirring often, until potatoes are tender when pierced (about 12 minutes). Sprinkle "sprinkles" over and mix in. Uncover and continue cooking until liquid is evaporated. Stir once or thrice.

Set aside 2 T. of the sliced green onions, or more if you want. Mix eggs, onions, grated cheese and remaining 1/4 C. water in a medium-sized bowl. mix until well blended.

Pour egg mixture over cooked veggies. Reduce heat to low and cook until egg is sets at edge of pan but is still wobbly in the middle.

Put pan under broiler until eggs feel set. Sprinkle with remaining onions and serve with green salad, fresh fruit and juice.

Season with salt & pepper.
