Creamy Baked Potatoes
1 onion, finely chopped onion,divided
4 oz. cream cheese, softened
4 oz. sour cream
3 to 4 cloves Garlic, finely chopped (more or less to taste) ,divided
4 Potatoes
Cook potatoes, with half of the finely chopped onion and a clove or two of minced garlic, in boiling water until tender.
Preheat oven to 325.
Drain potatoes.
With electric mixer, whip potatoes, additional chopped onion and minced garlic, cream cheese, and sour cream.
Pour mixture in casserole dish; dot with butter.
Cover and bake for 30 minutes.
