Herb-Grilled Potatoes

1 1/2 lb. potatoes, preferable Yukon Gold
1/4 cup extra-virgin olive oil
2 cloves garlic, minced
1 tbsp. fresh rosemary, thyme, basil or oregano, chopped
salt and pepper


Prepare a medium fire in grill (or preheat oven to 375°F).

Peel potatoes or scrub well, then slice 1/4 inch thick. Place in a large bowl and toss with olive oil, garlic, herbs, salt and pepper to taste.

Grill potatoes, turning frequently, until browned and tender, 15-20 minutes.

Serve hot.
