Hobo Potatoes

4 medium russet potatoes, cut in 3/8th inch slices
1 cup coarsely chopped onion
1 tsp. salt
1/2 tsp. dried herbs of choice*
1/8 tsp. garlic powder
1/8 tsp. pepper
2 tbsp. butter or margarine, cut into pieces


Tear off two pieces of heavy duty foil, about 18 inches each. Place one piece of foil on top of the other, then place sliced potatoes and chopped onion in center. Sprinkle with salt, herbs, garlic powder and pepper, toss to mix and dot with bits of butter.

Bring two long sides of foil together, over food and fold edges over several times, to seal but allowing space inside for steam. Fold short ends up and pinch together to seal.

Place foil packet on grill about 4 inches from coals. Cook for about 45 to 60 minutes, turning several times during cooking.

Makes 4 servings.

Note: *Herbs: Italian seasoning, rosemary or dill weed are suggested by recipe.
