Make Ahead Mashed Potatoes
2 3/4 to 3 pounds potatoes
8 oz. cream cheese
1/4 cup sour cream
1/2 stick margarine
salt and pepper to taste
Boil potatoes; mash. Whip well with sour cream, cream cheese, butter, seasonings.
Serve immediately or cover and store in refrigerator or freeze.
Reheat in microwave or oven-375 degrees for about 30 minutes. Leave the lid on when reheating.
