Potato Pie
Serves 8
4 medium potatoes, peeled
2 tablespoons butter (30 g)
2 tablespoons heavy cream
1 container (15 ounces) ricotta cheese
1 cup sour cream
1/2 cup grated parmesan cheese
2 eggs slightly beaten
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
6 scallions chopped
1 unbaked 10 inch pie shell
Preheat oven to 350 degrees F.
In a large heavy saucepan, cook potatoes in lightly salted water for 20 minutes or until tender.
Drain potatoes and mash until smooth.
Place in medium bowl and beat in butter and cream.
Add ricotta, sour cream, parmesan cheese, eggs, salt, pepper, nutmeg and scallions, blending well.
Pour into unbaked pie shell. Bake for 50 to 60 minutes or until golden.
