Potato Stuffed Peppers

1 1/2 pounds potatoes cooked and peeled
3/4 cup milk
3 medium green peppers
1 cup peeled and shredded carrots
1/2 cup chopped mushrooms
2 tablespoons chopped fresh parsley
2 tablespoons sliced scallions
1/2 cup shredded cheddar cheese
Salt and pepper to taste
1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dry


Preheat oven to 350 degrees F.

In medium bowl, mash potatoes and add milk.

Cut peppers in half removing seeds and membranes. Parboil in salted water in large saucepan for 10 minutes; drain.

To mashed potatoes in bowl, add carrots, mushrooms, parsley, scallions, cheddar cheese, salt, pepper and thyme. Mix well.

Pile mixture into drained green pepper halves. Bake in oven for 12 minutes.

Serves 6
