Three Potato Salad

3 cups diced, cooked sweet Potatoes
3 cups diced, cooked yukon gold potatoes
3 cups diced, red potatoes
1/3 cup green onions and tops
1 1/2 tsp. celery seed
1/2 tsps. salt
1/2 tsp. pepper
6 hard cooked eggs, reserve two for garnish,
1/2 cup chopped red pepper
1/2 cup chopped celery
1 cup sour cream
1 cup mayonnaise
1/4 cup cider vinegar
1 tsp. prepared mustard


Separate whites from yolks of four hard cooked eggs. Chop whites. Reserve yolks.

Combine potatoes, onions, celery seed, salt, pepper celery, red pepper and chopped egg whites. Chill.

Mash the 4 egg yolks; add sour cream, mayo, vinegar and mustard. Mix well. Pour dressing over potatoes and mix well.

Let stand 20 minutes before serving.

Note: Sweet Potatoes or Yams can be used. Just be sure you cook them just before being done. If you cook them too soft they will mash up and not have the same effect.
