Potato Zucchini Fritters

1 large potato, peeled
2 medium zucchini
1/4 cup chopped onion
1/4 cup cornmeal
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons grated parmesan cheese
3 eggs slightly beaten
2 tablespoons butter, divided
2 tablespoons olive oil, divided


Shred potatoes and zucchini using large hole side of 4 sided grater or food processor. There should be 1 cup of shredded potato and 2 cups shredded zucchini.

Place vegetables in large bowl. Add onion, cornmeal,parsley, salt, pepper, parmesan cheese and eggs and stir well. In a large skillet heat 1 tablespoon each butter and oil. Drop potato mixture by heaping tablespoonfuls in skillet.

Fry for 3 minutes or til golden brown on bottom; turn and brown second side. Add remaining butter and oil as needed.

Makes about 12 fritters.
