Red Cinnamon Cucumber Pickles

Red Cinnamon Cucumber Pickles takes 5 days
Makes about 9 pints

2 gallons large cucumbers, peeled, seeded, and sliced,(over sized ones, so that the seeding is easier to do)
2 cups pickling lime
8 1/2 quarts water
1 cup vinegar
1 Tbl. alum
1 bottle red food coloring
water to cover
3 cups vinegar
11 cups sugar
1 (12 oz.) pkg. red hots
3 cups water,
10 cinnamon sticks
cinnamon oil to taste


Day 1: Combine the lime, 8 1/2 qts. water and cucumber slices. Soak for 24 hours.

Day 2: Drain and wash the slices in cold water. Soak in cold water for 3 hours and drain. Combine 1 cup vinegar, alum ,food coloring, cucumber slices, and water to cover. Simmer for 2 hours. Drain.

Combine 3 cups vinegar, sugar, cinnamon sticks, red hots, and 3 cups water and bring to a boil. Pour this syrup over cucumber slices and let stand 24 hours. You can add a few drops of cinnamon oil for more cinnamon taste.

Day 3: Drain syrup into pan and reheat. Pour back and forth over cucumber slices. Let soak 24 hours.

Day 5: Drain and reheat syrup. Spoon cucumbers into hot sterilized jars. Pour hot juice over them. Adjust lids and process in boiling water bath for 5 minutes.
