Rhubarb Custard Bars

2 Cups flour
1/4 cup sugar
1 Cup cold butter
2 Cups sugar
7 Tbls. flour
1 cup whipping cream
3 eggs, beaten
5 Cups frozen rhubarb, chopped, thawed and drained


Preheat oven to 350 degrees F.

In a bowl mix first 3 ingredients until crumbly. Pat into 13x9 pan.
Bake at 350 for 10 min.
Combine sugar and flour and whisk in whipping cream and eggs. Stir in the rhubarb and pour over baked crust.

Continue baking at 350 for 45-55 min or until custard is set. Cool completely.

Topping:
2 Pkg. cream cheese(3 oz. each)softened
1/2 Cup sugar
1/2 tsp. vanilla
1 Cup whipping cream(whipped)


Beat cream cheese, sugar,and vanilla until smooth. Fold in whipped cream. Spread over cooled custard. Chill.

Cut into squares.
