Winter Vegetable au Gratin

1/2 cup butter, divided
4 cups shredded rutabaga
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-3/4 cups light cream
1/2 cup shredded Cheddar Cheese
2/3 cup fine dry bread crumbs (unseasoned)


Preheat oven to 350ºF. Lightly grease 1-quart casserole. Set aside.

In large skillet melt 2 tablespoons butter. Add rutabaga, tossing to coat. Cook and stir over medium heat for about 5 minutes. Remove from heat. Set aside.

In 2-quart saucepan melt 2 tablespoons butter. Remove from heat. Stir in flour, salt and pepper. Blend in light cream. Cook and stir over medium heat until mixture thickens. Stir in cheese and rutabaga. Transfer to prepared casserole.

In small saucepan melt remaining 1/4 cup butter. Add bread crumbs, tossing to coat. sprinkle over rutabaga. Bake at 350ºF for 25 to 30 minutes, or until bubbly and golden brown.
