Shoe Peg Corn Casserole with Green Beans
1/2 cup chopped onion
1/2 cup celery
1/4 cup bell peppers, chopped
1/2 cup sharp cheese, grated
(medium cheese may be used)
1 (15-16 oz.) can Shoe Peg corn, drained
1 (15-16 oz.) can French-style green beans, drained
1 (10 3/4 oz.) can cream of celery soup
1/2 pt. sour cream
salt and pepper to taste
1 stick oleo and 1 stack of Ritz crackers
Preheat oven to 350 degrees.
Mix together onion, celery, bell peppers, cheese, corn,
beans, soup and sour cream in a large baking dish. Add salt and pepper to taste.
Melt oleo and mix well with crushed crackers; spread on top of vegetables.
Bake at 350 degrees for 45
minutes.
