Aunt Maybles Sauerkraut Balls

1/2 lb. bulk sausage
1/4 cup chopped onion
1 (16 oz) can sauerkraut
2 tbsp. fine dry bread crumbs
4 oz. cream cheese softened
2 tbsp. finely snipped parsley
1 tbsp. sweet hot mustard
1/2 cup flour
1/2 cup fine dry bread crumbs
dash of garlic powder
dash of salt and pepper
cooking oil for deep frying


In large skillet, cook sausage and onion until brown, breaking up sausage into small pieces. Drain. Drain kraut, pressing out as much liquid as possible.

In large mixing bowl combine kraut, sausage mixture, 2 tbsp. bread crumbs, cream cheese, parsley, mustard, garlic, and s and p. Cover and chill for several hours or overnight.

Put flour in shallow container, in another shallow container, beat the eggs and water until combined.

Put bread crumbs in a third shallow bowl. Using about 2 tbsp. for each shape kraut mix into balls. Roll balls into flour, egg, and then into bread crumbs.

Deep fry a few at a time in 365 degree hot oil. Remove from oil with slotted spoon and drain on paper towels. Keep warm on a baking sheet in 275 degree oven.

Makes 24-30 balls.
