 Scalloped Potatoes

  3 Tbl. flour
  1 1/2 tsp. salt
  3/4 tsp. white pepper
4 lbs. small red potatoes, peeled and cut into 1/8" slices
1 1/4 cups chopped scallions (sweet onions are okay)
  1 tsp. garlic, minced
  4 1/2 Tbl. butter
  3 cups half and half

Preheat oven to 350 degrees F. Combine flour, salt and pepper.

Layer 1/2 of potatoes in greased 13x9 baking dish. Sprinkle 1/2 scallions and garlic on top. Sprinkle with seasoned flour.

Repeat with the rest of the potatoes, scallions and garlic. Dot with butter.

Heat cream until steaming, not boiling. Pour over potatoes and bake, uncovered 1 hour, until potatoes are tender and top is browned.

Serves 10.
