Spaghetti Squash 
1 (3 lb.) spaghetti squash 
1 tbsp. butter 
2 tbsp. Parmesan or Romano cheese 
1 or 2 cloves garlic, minced and crushed 
1/2 cup finely chopped parsley 
salt and pepper to taste 
Microwave squash about 9 minutes. Remove 'spaghetti'. Place the 'spaghetti' in a colander and allow to drain into a bowl - reserve juice. 
Saute garlic in the butter for 2 minutes, then add the drained juice and parsley. 
Heat for 1 minute, then toss with squash. Sprinkle on the cheese, salt and pepper, and toss again. 
4 servings.
