Creamed Spinach

4 lbs. spinach
1 qt. cream
salt
ground white pepper
nutmeg


Wash spinach well, and cook in a little water for about 10 minutes. Drain very well and process it.

Put in a pot and cover with the cream, salt and nutmeg, and cook until thick, stirring with a wooden spoon.

Serve in individual moulds with hard boiled egg slices.
