Creamed Spinach with Bacon

1 pkg. fresh spinach - about 4 cups
2 slices bacon
1 onion sliced
2 tbsp. flour
1/2 tsp. salt
Pepper
1 clove garlic, minced
1 cup milk, - or 1/2 sour cream and 1/2 milk


Cook the spinach. Drain well.

Saute the bacon and onion until bacon is crisp, and onion is tender. Remove the pan from heat and stir in flour, salt, pepper and garlic, blend well. Add the milk and cook, stirring until sauce thickens. Stir in spinach and serve hot.
