Spinach Dip

Spinach Dip

1 onion chopped fine
1 (8 to 10 oz.) can tomatoes chopped, drained or 1 fresh tomato, chopped
2 cans spinach, drained
4 oz. can green chilies
8 oz. cream cheese
10 oz. shredded Monterey Jack cheese
1 cup half and half
2 Tbl. red wine vinegar
2 Tbl. sour cream


Preheat oven to 400 degrees and grease a baking dish.

Saute onions until soft; add drained tomatoes, spinach and green chilies and cook 2 minutes. Add remaining ingredients and blend well.

Bake for 35 minutes ; serve warm with chips.
