Garlic Lemon Spinach

Garlic Lemon Spinach

4 tbsp. olive oil
3 garlic cloves, finely chopped
500 g. / 1 lb. 2 oz. baby spinach leaves
juice and rind of 1/2 a lemon
sea salt and black pepper
lemon wedges to serve


Heat the oil and fry the garlic until sizzling but not browned. Add half the spinach and stir until wilted. Transfer to a dish and keep warm while you cook the second batch.

Toss all the spinach in the lemon juice and rind and season with salt and pepper. Serve with fresh lemon.
