Spinach: Ravioli Nudi (Naked Ravioli)

This recipe is given the name because of no pasta surrounding the filling. You can adapt this to use as your filling for rollups. Par boil your lasagna noodles, drain and cool before filling.

16 ounces cooked spinach
12 ounces ricotta cheese
3 egg
1 1/4 cups flour
nutmeg
salt
3 tablespoons parmesan cheese -- grated


Drain the cooked spinach, and chop finely. Place in a large bowl and add the ricotta, eggs, parmesan and flour. Season with salt and nutmeg.

Form small walnut size balls and roll in flour.

Perform a test first:
Poach test ravioli in lighly salted water to see if it holds up. If not, add a little more flour.

Poach the ravioli's in softly boiling water, as they rise to the top, let poach for one minute and remove to a serving dish.

Serve with fresh sage leaves, sauteed in butter and sprinkled with freshly grated parmesan cheese.

Can be made ahead of time and reheated in the oven to serve.
