Spinach Casserole
Credit: Rival Crockpot
2 (10-oz.) packages frozen chopped spinach, thawed and drained and squeezed dry
2 cups cream-style cottage cheese (low fat o.k.)
1/4 cup butter, cut in pieces (you can halve this)
1-1/2 cups American cheese, cubed (Velveeta)
3 eggs, beaten
1/4 cup flour
1 tsp. salt (optional) (doesn't need it)
Thoroughly combine all ingredients in mixing bowl. Pour into greased crockpot. Cover and cook on high for 1 hour, then turn to low for 4-5 hours. Recipe can be doubled, if desired.
