Spinach Potatoes
6 large potatoes
1/2 cup softened butter
1 tsp. sugar
2 Tbl. chopped green onion
3/4 cup half and half
1 tsp. salt
1 1/2 tsp. dill weed
1 pkg. chopped spinach, cooked and well drained
1/4 cup freshly grated Parmesan
Boil potatoes until tender. Mash them with the butter, sugar, green onions, half and half, salt and dill weed. Add spinach.
Turn into buttered 2 quart casserole and bake 30 to 40 min. at 350. Remove from oven and sprinkle with Parmesan before serving.
