Baked Squash

2 lbs. hubbard or butternut squash
1 slightly beaten egg
1/2 cup cornflake or graham cracker crumbs
3 Tbs. light brown sugar
1/4 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
1 Tbs. orange marmalade
2 Tbs. unsalted butter or marg.


Peel and cube squash and cook till soft. Mash squash and add remaining ingredients. Mix thoroughly. Bake in a greased 2-qt. casserole for 45 min.@ 300ºF or until top and sides are light brown.

The original recipe states "You may add or take out anything from this recipe according to your taste, except for the egg. If squash is runny, add more cornflake or graham cracker crumbs. This recipe freezes well."
