Posted by Phyllis on April 16, 1998 at 19:32:32: Squash Casserole 4 cups yellow summer squash, cooked and drained 1 cup sour cream 1 (10 3/4 oz.) can cream of chicken soup, undiluted 1 medium purple onion 1 bunch green onion, chopped with tops 1 (8 oz.) can water chestnuts, drained and chopped 1 (2 oz.) jar diced pimento 2 cups shredded Velveeta cheese 2 sticks butter,divided- melted 1 envelope ranch dressing mix 2 to 3 cups crushed cracker crumbs Preheat oven to 350 degrees F. Grease a 9x13" baking dish. Mix all ingredients except 1 stick melted butter, ranch dressing and cracker crumbs. Combine remaining butter, ranch dressing and crackers for topping. Pour squash mixture into prepared baking dish, add topping and bake 35-45 minutes or until hot and bubbly.
