Microwave Summer Squash Italiano

3 tablespoons butter or margarine
1 onion minced
1 garlic clove, minced
1 small green pepper, chopped
Oregano to taste
1 1/2 pounds summer squash, sliced
4 medium tomatoes, chopped
1/2 tea. salt (or to taste)
1 cup grated Parmesan cheese


In a 8 x 12 utility dish, cook butter or margarine with the onion, garlic, green pepper and oregano on High for 4 minutes. Stir in squash, tomatoes and salt. Cover and cook on High for 8 minutes. Stir and check for doneness. If necessary, cook 2 more minutes. Remove cover. Top with Parmesan cheese. (If desired, you can pop under the broiler to brown cheese)
