Spaghetti with Courgettes (Zucchini)
(Serves 6 generously)
4 tbsp olive oil
2 lb 4 oz small courgettes sliced into slim sticks
1 lb 2 oz good quality spaghetti
4 oz freshly grated Parmesan cheese
2 oz butter
12 basil leaves, roughly torn
Heat plenty of water in a large pan with 1 tbsp coarse sea salt and cook the pasta.
Melt the butter with the olive oil and sauté the courgettes gently till slighly softened but still “al dente” a little with a little black pepper and just a touch of salt.
Drain the pasta and place in a very hot serving bowl, adding a little of the cooking water. Add the basil to the courgettes and then quickly toss it through the spaghetti along with the cooking oil and butter and the Parmesan cheese. Season generously with more coarsly ground black pepper.
Serve immediately – provide very hot dishes – serve additional Parmesan to sprinkle on top if you want.
