Italian squash
3 slices bacon, sliced in 1/4 inch pieces
1/2 cup onion, diced
1 package yellow squash, sliced 1/4 inch thick
1 (15 oz.) can stewed tomatoes
1 teaspoon oregano
Salt and pepper to taste.
Saute the chopped bacon and onion together until bacon and onion are soft. Add squash, cook and stir a couple of minutes. Stir in stewed tomatoes, oregano, salt and pepper. Cook over medium-low until squash is soft.
