Sweet Potato Casserole
6 large sweet potatoes
6 Tbs. brown sugar
2 eggs beaten
1/4 orange juice
2 Tbs. butter, melted
1 teas. Vanilla
1/2 teas. Salt
Topping:
3 Tbs. butter, solftened
1/2 cup brown sugar
3/4 cup chopped pecans
Preheat oven to 375 degrees F.
Bake sweet potatoes until very tender, about 1 hour and 20 minutes.
Remove and cool. Reduce heat to 350 degrees.
When potatoes are cool enough to handle, cut them in half, scoop out flesh, and mash until smooth. You should have about 4 cups. Stir in brown sugar, eggs, orange juice, butter, vanilla, and salt. Place in casserole.
To make topping, combine the butter, brown sugar, and pecans.
Sprinkle over sweet potatoes. Bake for 30
minutes. Serve hot.
Yield 8 services, 390 calories per serving
