Mashed Yams with Bourbon
5 lbs yams
1 3/4 teaspoon salt
1/2 heaping teaspoon ground nutmeg
1 cup sweet butter, softened
1/3 cup bourbon
freshly ground pepper
Scrub yams, cut each one in half, crosswise if large; put in a large deep pot, cover with salted water, bring to a boil, cover and boil gently for 20-30 minutes, until fork-tender. Drain and peel them as soon as they are cool enough to handle. Mash them by hand or in an electric mixer with salt and nutmeg, then gradually beat in butter. Add bourbon in a stream along with pepper.
Transfer to a greased 2 quart casserole dish, cover lightly with foil and heat in a 350 degree F. oven for 25 minutes. Stir them up well with a spoon and serve piping hot.
These can be made up to a day in advance and refrigerated, bring back to room temperature before baking.
They freeze well wrapped in heavy foil. Let them defrost, still wrapped, in the refrigerator, then transfer to the casserole and bake as above.
