Sweet Potato Mickies
Place scrubbed sweet potatoes on grill and cook for 40 minutes or until potatoes are easily pierced and skins are crusty black.
Turn potatoes every 5 minutes.
Serve split open and topped with a mixture of 1/2 cup apricot preserves mixed with 1/4 cup melted butter.
