Sweet Potato Puffs I

2 cups warm mashed potato, 3 lbs. potatoes (raw)
2 tbsps. chopped cilantro
1 1/2 - 2 tsp. minced onion
3 eggs, separated
salt and pepper to taste


Preheat oven to 350° F and grease muffin pan.

Beat egg yolks. Add mashed potatoes, cilantro, onion, salt and pepper.

Place in greased muffin pans and bake until brown, about 20 minutes.



Sweet Potato Puffs II

2 (18-oz.) cans whole and cut sweet potatoes
flour
Marshmallows (large)
Crushed corn flakes
Dark brown sugar
Dark corn syrup


Preheat oven to 350 degrees.

Put sweet potatoes in a large bowl, and drain as much of liquid from them as possible. Gently mash all pieces together.

Dust your hands with a little flour, and then mold a palmful of potato in one hand and place a marshmallow in center of it. Place a second palmful of potato over top of marshmallow, then mold what you have into a kind of sweet potato snowball. Place in a baking dish. Repeat until all of sweet potato mixture is used.

Sprinkle about 1 tablespoonful of brown sugar on top of each puff, then drizzle 1-2 tablespoonsful of corn syrup over brown sugar.

Bake for 20 minutes, or until brown sugar has melted over top.
