Sweet Potato Souffle

5 cups potatoes, mashed (9 medium to large yams)
1 3/4 cup sugar
1/2 tsp. salt (optional)
3 eggs
2/3 stick margarine
3/4 cup milk
2 tsp. Vanilla

TOPPING:
1 1/2 sticks margarine, melted
1 cup brown sugar
1/2 cup flour
1 cup pecans, chopped (or coconut)


Preheat oven to 350 degrees F.

Combine first 7 ingredients in casserole dish.

Mix together remaining 4 ingredients (topping) and put on top.

Bake at 350° for 30-35 minutes.
