Stuffed Pork Chops With Sweet Potato Gravy

Potatoes:
4 medium sweet potatoes, roasted until soft
4 T. butter
1 cup half-and-half or cream
salt and pepper, to taste
1/4 tsp. nutmeg

Stuffing:
1 small onion, minced
1 med. granny smith apple, diced
1/2 cup chopped walnuts
reserved sweet potato gravy
1 cup bread crumbs

Pork:
4 thick pork chops
1 T paprika
1 T salt
1 t. cayenne (this will make it very spicy; use less if "heat" bothers you)
1 t. ground thyme


Scoop the potato into bowl and stir until smooth Mix in butter until melted. Then stir in half and half or cream. Add salt, pepper and nutmeg and stir until blended. Reserve 1 cup of this mixture; set aside. Butter ceramic casserole (about probably 6 x 9 inches and 1 or 2 inches deep.) Spread rest of sweet potato gravy over bottom.

Mix stuffing ingredients together in a large bowl. Slit a pocket in 4 thick pork chops and stuff with bread crumb mixture. Mix together paprika, salt, cayenne, and thyme. Sprinkle over both sides of stuffed pork chops.

Lay the chops over the sweet potato gravy in pan. Cover with foil. Bake at 350F for 1 to 1-1/2 hours.
