Sweet Potato Surprise
2 large cans of yams or equivalent amount of fresh yams, cooked and cut into chunks
1 1/4 cups brown sugar
1 1/2 TBS cornstarch
1/4 tsp salt
1/8 tsp cinnamon
1 tsp shredded orange peel
1 (1 lb) can (2 cups) peeled apricot halves
1 cup apricot juice
2 TBS butter
1/2 cup seedless raisins
chopped pecans (put pecans on after mixture has been poured over yams)
Combine brown sugar, cornstarch, salt, cinnamon, orange peel, apricots and apricot juice, butter and raisins. Bring to a boil. Simmer until it thickens a bit.
Place yams in a greased baking dish. Pour mixture over yams and top with pecans. Bake at 375 for 25 minutes. This can be fixed ahead and kept refrigerated before baking. Will serve about 10.
