Sweet Potato and Ham Hash

1 tablespoon safflower oil
3 Tablespoons chicken broth
1-1/2 lbs. sweet potatoes or yams, sliced with peel
1 small onion, diced
1 cup diced ham
salt and coarsely ground black pepper to taste


In a heavy 10-inch skillet over medium high heat, heat oil and broth. Add sweet potatoes and cook until liquid has evaporated and potatoes are barely tender.

Add onion and ham. Continue to cook over medium heat, stirring and scraping the bottom of the skillet until everything is browned and very tender. This will take about 30 minutes.

Season with salt and pepper and serve alone or wrap in Crispy Cornmeal Crepes. (In archives).

*Note: sweet potato can be substituted by any other potato.
