Sweet Potatoes Caribbean

2 lbs. sweet potatoes or yams, peeled and quartered
5 Tablespoons butter
Zest of one Orange
2 Tablespoons brown sugar
1/4 cup Heavy Cream
1 tsp. Cinnamon
Salt and Ground Black Pepper; to taste
1 Jalapeno, roasted, skinned and chopped very fine
Preheat oven to 350.
Simmer potatoes in lightly salted water until tender.
Drain potatoes well; put in a shallow baking pan and put in oven to dry potatoes out; approx. 15 to 20 minutes.
Remove from oven and put in a bowl.
Using a hand masher; not an electric beater; mash potatoes.
Add butter, zest of one orange; brown sugar; cinnamon; salt and pepper to
taste.
Fold in cream and jalapeno.
Serve.
