Braised Swiss Chard
2 lbs. Swiss chard
salt
1/4 cup olive oil
2 garlic cloves, peeled
3 salted anchovies, de-boned, rinsed and chopped
6 tomatoes peeled and chopped
fresh ground black pepper
Wash chard several times in several changes of water.
Cook in a pot of salted water for 10 minutes. Drain and chop and then
squeeze dry.
Heat olive oil in large skillet and add garlic and cook for l minute. Do not burn the garlic.
Add the anchovies, crush them with a fork until they break down into a paste and stir in tomatoes and cook for an additional 15 minutes.
Add Chard. Season with salt and pepper
