Baked Tomato Soufflés

8 firm tomatoes, halved
salt and pepper
2 egg whites
1 Tbl. drained horseradish
1 cup mayonnaise
1 Tbl. minced onion


Preheat oven to 450 degrees F. Sprinkle the tomatoes with salt and pepper. Let drain.

Beat egg whites stiff. Add mayonnaise, minced onion , horseradish and salt and pepper.

Place tomato halves in individual baking cups. Place a spoonful of eggwhite mixture on top. Bake at 450 degrees for 20 minutes or until puffed and lightly brown.
