8 medium green tomatoes
1 cup corn, cut from cob
1 jalapeno -- minced
1/4 cup chopped sweet red pepper
1/4 cup sliced green onions
3 tbl. chopped fresh basil
2 tbl. chopped fresh cilantro
1 cup (4 oz.) shredded Monterey jack cheese
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 tbl. cornmeal
1 1/2 tbl. butter or margarine


Preheat oven to 400° F.

Cut tops from tomatoes; set tops aside. Scoop out pulp, leaving shells intact; chop pulp, and set aside. Invert shells on paper towels to drain.

Combine tomato pulp, corn, and next 8 ingredients; spoon into tomato shells. Sprinkle evenly with cornmeal, and dot with butter.

Place reserved tops, cut side down, and filled tomatoes on a lightly greased baking sheet. Bake at 400 degrees for 25 min or until throughly heated.

Cover filled tomatoes with tops.
