Tomato, Basil and Jalapeno Pie
1 unbaked piecrust
1-1/2 cups shredded Mozzarella cheese
5 Roma tomatoes
1 cup loosely packed fresh basil leaves
4 cloves garlic, peeled
2 (or more) fresh jalapenos, seeded and chopped. (I use 3)
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
1/8 teaspoon ground pepper
Unfold piecrust and place in 9" pie plate. Prebake according to package directions. Remove from oven. Sprinkle with 1/2 cup Mozzarella cheese.
Adjust oven to 375 degrees.
Peel tomatoes and cut into wedges. Drain on paper towels. Arrange wedges on top of melted cheese in the baked pie crust. Combine basil, garlic and jalapenos in a food processor or study blender. Process until coarsely chopped. Sprinkle mixture over tomatoes.
In a medium mixing bowl, combine remaining Mozzarella, mayonnaise, Parmesan and pepper. Spoon over top, spreading to cover basil/jalapeno mixture. Bake at 375 degrees for 35-40 minutes or until top is golden and bubbly. Serve warm.
