Torrejas De Maiz Tierno (Fresh Corn Fritters)

1/4 cup Oil, vegetable
3 cups sweet corn -- cut from the cob
1/4 cup all-purpose flour
2 tbl. light brown sugar
1/2 tsp. Salt
1 large Eggs -- lightly beaten
2 tbl. Cheese, cheddar -- grated


Heat oil to 265 degrees.

Gently but thoroughly combine the corn and its liquid with the flour, sugar, and salt. Blend in the egg and cheese. Stir the batter well.

Drop in the batter by teaspoonfuls. Fry until golden brown on all sides. Drain on paper towels and serve very hot.
