Turnip Puff
from the Enotia Church book, recipe by Cathey Watters

6 cups hot mashed turnip
4 tbsp. butter
Beat in: 4 well-beaten eggs
Add: 6 tbsp. brown sugar
2 tsp. baking powder
1/2 tsp. salt (or 1 tsp. to suite)
1/4 tsp. pepper


Combine hot mashed turnips with remaining ingredients. Mix until blended and turn into a buttered casserole dish. Top with generous amount of soft buttered breadcrumbs. Sprinkle with paprika and bake at 350° F. for 25 minutes or until lightly brown and hot.

Serves about 10 people.

Note: If you freeze this before baking ——let it thaw completely, then bake as directed.
