Turnip Slaw
5 small turnips
2 eggs, beaten
1/2 cup sugar
1/3 cup vinegar
4 Tbsp. butter
2 Tbsp. parsley
Cook turnips; slice very thin. Drain well; keep hot.
In a saucepan, add eggs, sugar, vinegar and butter. Cook over low heat until thickened. Pour hot dressing over turnips. Garnish with parsley.
Turnip Slaw
1/2 tsp. sugar
2 tsp. red wine vinegar
1/4 cup sour cream
1/4 tsp. salt
2 Tbsp. mayonnaise
2 cups shredded raw turnips
Mix sugar, salt, vinegar and mayonnaise and sour cream until well blended. Pour mayonnaise mixture over turnips and toss lightly to mix. Serve in bowl lined with salad greens and sprinkle paprika over top.

chopped onion
celery seed
Dressing:
1/4 cup vinegar
1/4 cup oil
1/4 cup sugar
1/4 cup water
The amount of ingredients depends on quantity desired.
Turnip Slaw
1 gal. turnips, grate
1 1/2 cups white vinegar
3 cups sugar
4 Tbsp. salt
2 oz. horseradish
4 Tbsp. mustard seed
Mix vinegar, sugar, mustard seed, salt and horseradish. Pour over turnips and mix well. Let set one week.
