Sherrie's Faux Mashed Potato's

2 lbs Turnips peeled & cubed large
1 tbsp Butter
1/4 cup heavy cream
1/4 cup sour cream


In a large stock pot cover cubed turnips with water and bring to a boil. Cook until tender, just like a potato. Once they are tender drain well, it's important to remove all of the loose water.

Beat turnips until very smooth and then add the butter, cream, and sour cream. Blend until smooth. Add some salt at this phase to taste while you still have the blender in the mixture, so the salt incorporates well.

Makes 8 servings @ 3.8 carbs per serving
