Vegetable Bake
1 (16 ounce) pkg. frozen vegetables, carrot broccoli, and cauliflower mix
1 (10 3/4 oz.) can cream of mushroom soup
1/3 cup sour cream
1/4 teaspoon pepper
1 (4 ounce) jar pimientos -- sliced
1 cup swiss cheese -- shredded, divided
1 (2.8 oz.) can French fried onions, divided


Preheat oven to 350 degrees F. Thaw and drain vegetables. Place in a oven-proof dish (raw).

Add remainder of ingredients to vegetables, reserving 1/2 of the cheese and French fried onions to sprinkle over the top the last 15 minutes of baking.

Bake uncovered for 30 minutes. Top with remaining cheese and onions and bake for 15 minutes more.
