Cheese and Garden Vegetable Pie

1 (9 inch) deep dish pie shell
3 medium vine ripened tomatoes
1 small yellow onion
1/4 cup diced green pepper
3/4 cup mayonnaise
1/2 cup grated sharp cheddar cheese
1/2 cup grated mozzarella cheese
3 slices bacon, cooked
2 slices additional bacon, garnish


Preheat oven to 350 degrees F (175 degrees C).

Bake the pie shell for 9 to 10 minutes or until browned.

Cut the tomatoes into bite size pieces, dice the onion and the green bell pepper. Crumble the bacon.
In a large bowl, mix the mayonnaise, cheeses, vegetables and bacon. Spoon into the baked pie shell. Top with additional crumbled bacon.

Bake at 350 degrees F for 25 minutes or until edges brown.
