adapted from a recipe in Taste of Home back in 1998 
Crockpot Vegetables (serves at least 8) 
6 cups green beans (thawed if using frozen) 
5 carrots, sliced 
1 (14.5 oz.) can diced tomatoes 
1 large onion 
1/4 cup butter or margarine, melted 
3 TBL. tapioca 
1 TBL. sugar 
salt and pepper 
Mix the vegetables together and place in crock pot.  Combine the remaining ingredients and stir into vegetables.Cover and cook on LOW for 7-8 hours, or until tender. Serve with slotted spoon.
