Vegetable Pie

1 onion chopped
1/4 tsp. Pepper
2 -3 cups sliced squash
dash garlic powder
1 green pepper, sliced
1 tomato sliced
3-4 Tbsp. Butter
1 deep dish pie shell, unbaked
1 tsp. Salt
2/3 cup mayonnaise (low-fat if desired)
1 cup grated mozzarella cheese


Preheat oven to 350 degrees F.

Saute' onion, squash, and pepper in butter until crisp, but not soft. Drain well and add seasonings. Or mix first three vegetables with 1Tbsp of melted butter and seasonings.

Place tomato slices in bottom of pie shell; add vegetables.

Mix mayonnaise and cheese. Pour this mixture over vegetables. Bake uncovered at 350 degrees for 1 hour.
