Grilled Vegetables with Smoked Sausage

1/2 onion, thickly sliced & quartered
1 zucchini, sliced 1/4" thick & halved
8 mushrooms, sliced 1/4" thick
1/2 lb beef sausage, sliced 1/4" thick & halved
12 cherry tomatoes -- halved
rosemary, thyme and parsley, to taste
salt (or garlic salt)
coarse ground black pepper, to taste
Olive oil
8 oz bow tie pasta, cooked al dente
Pecorino Romano/Parmesean cheese, grated


Mix all ingredients, except pasta, in large bowl and drizzle enough olive oil over all to coat well. Marinate for about 30 minutes.

Cook and drain the pasta. While still warm drizzle olive over it and stir lightly. Set aside and keep warm while grilling the vegetables and sausage.

Preheat grill on high; reduce temperature to medium/low when ready to gill. Spray a grill pan (one with holes in it so the food comes in contact with the cooking grids but doesn't allow the food to fall through) with cooking spray. Add the vegetables and sausage mixture. Grill, stirring often until all vegetables are desired tenderness, 20 to 30 minutes depending on temperature of grill.

Place warm pasta on a plate and top with the grilled vegetable. Top with grated cheese and serve immediately.

NOTES: For feeding more than 2-3 people, prepare larger amounts of pasta and cook several batches of the vegetable sausage mixture and re-heat in the microwave just before serving.
